Roasted Carrots on the Green Sauce

Ingredients
For the roasted carrots
- 1 kg carrots I used organic
- 3 tbsp olive oil extra virgin
- 3 tbsp balsamic vinegar I used vine vinegar
- 1 tsp each herbs: Rosemary, Smoked Paprika, Cinnamon, Turmeric Or use the ones you like the most
- 1 pinch salt and pepper for the taste
For the protein green sauce
- 1 bunch leafy greens of your choice I used coriander (cilantro) but parsley would be as good
- 1/2 glass Greek yoghurt* I used labneh with a splash of water for better blending
- 1/2 avocado
- 1 clove garlic For extra spiciness use 2 cloves
- 1/2 lemon juice squeezed
- pinch salt and pepper for the taste
* For VEGAN VERSION simply change Greek Yoghurt for a vegan one. I highly recommend soy yoghurt or almond, plain. For more texture and protein you can add a piece of tofu.
Topping of your choice
- You can use: cheese (Feta, Halloumi, Mozarella)**, raw, roasted or boiled vegetables (Sweet Potatoes, Broccoli, Tomatoes etc) ** For VEGAN VERSION use only vegetables or lentils like roasted chickpeas (video soon!)
Instructions
- First clean and peel your carrots. If you're using bio ones, you don't have to peel just wash them carefully. Sprinkle with olive oil, balsamic and other herbs. Mix well so all carrots are well coated.
- Put the carrots in the preheated stove (190 degrees Celsius or 375 Farenheit) for 30-35 minutes or until tender.
- Meanwhile, make your sauce. Add to a blender cup all ingredients for a sauce and blend until smooth (around 60 seconds). Prepare your toppings.
- And prepare your meal: on a plate spread the sauce, put carrots on top and add toppings of your choice. Sprinkle with olive oil and the rest of your leafy greens if you have some leftovers.
