why do I start my nutrition recipes with those Healthy Blueberry Muffins? Well, I have to confess – I am a huge sweet tooth. I love a have a small goodie with my morning coffee and I make sweets for my whole family. Unfortunately, we all know that sugar is not good for you. Not only it destroys the teeth, is the main cause of overweight but, it can also lead to more serious causes like diabetics. Therefore, in the realm of guilt-free indulgence, my gluten-free and no-sugar-added Healthy Blueberry Muffins are a perfect solution of health-conscious choices and delicious flavours. Ingredients:

  • 2 cups of almond flour 
  • 1 cup of glute-free oat flower 
  • 4 eco or free-range eggs (M/L) 
  • 1 cup of fresh or frozen blueberries 
  • 1/4 cup of erythritol as it is low in IG (but you can use a sweetener of your choice) 
  • 1/3 cup of greek yoghurt (you can use vegan yoghurt as well)
  • 1 tbsp of baking powder
  • 1/2 tsp of baking soda
  • few drops of vanilla extract
  • pinch of salt 

Healthy Blueberry Muffins instruction:

  1. Mix eggs with sweetener of your choice. Add eggs, yoghurt and vanilla. Give it a good whisk.
  2. Add the rest of dry ingredients: almond and oat flour, baking powder and baking soda, pinch of salt. Mix it all with the spatula, the dough will be pretty thick.
  3. Add fresh or frozen blueberries and combine it all together.
  4. Put the dough into muffin forms. Fill it around 3/4 of the form as the pastry will grow. You should have around 10-12 muffins.*
  5. Place on the preheated stove (180 degrees Celsius or 370 F) and bake for around 30 min or until golden brown on top and a toothpick dry.**
  6. After muffins are done keep them in the stove for 5-10 min with doors open and after place out.
  7. Voila! Your muffins are ready!

*You can make a loaf from the dough as well. Use two small loaf forms or one long one. The baking may vary, so please check while baking.
